Very intense green fruitiness. On the palate, a great concentration of flavor with a pleasant encounter of medium intensity bitterness and spiciness.
Ideal for grain soups, chickpea and bean stews, bruschetta, grilled red meats, boiled beef, raw artichokes.
Characteristics of the Nocellara del Belìce Cultivar
Nocellara del Belìce (synonyms: Nuciddara, Nebba, Oliva tunna, oliva da salari) is cultivated in the Belìce Valley, a territory in western Sicily that includes the municipalities of Santa Ninfa, Castelvetrano, Campobello di Mazara, Partanna, Salaparuta, and Poggioreale, areas that fall within the PDO zone for oil, called Valle del Belìce.
Nocellara del Belice is characterized by large size, 5-7 grams, spherical shape, taking the characteristic shape of a walnut (hence the name Nocellara), in two color variants: green or black. The intense green type becomes wine-red as it ripens.
Oil obtained from "Nocellara del Belice" olives has a maximum acidity of 0.3% and a medium density value. Its green color with golden yellow reflections has an aroma of freshly crushed olives with hints of fresh grass and bell pepper.
