Two-Phase Processing: Sustainability and Quality
Choosing the two-phase system is also an eco-sustainable choice. By eliminating the addition of process water—which is necessary in the three-phase system—the natural resources used are reduced, and effluent production is zeroed. The result? An oil richer in aromas, with greater body and fruitiness, and better preservation thanks to polyphenols, powerful natural antioxidants that are not dispersed.
Cold Extraction: What Does It Mean?
Cold extraction ensures that the temperature during the malaxation of the olive paste does not exceed 27°C. Above this threshold, the quality of the oil decreases: heat facilitates extraction but compromises the organoleptic profile. We don't compromise.
