ARTICHOKES WITH BREADCRUMBS AND EVO

Spring is not only the season of flowers and love but also of many vegetables and greens with which you can indulge yourself in the kitchen. Today we have prepared a dish dedicated to the artichoke, a precious vegetable as a natural remedy for our health and excellent for use in the kitchen. For you, an easy, fast and super good mom recipe. It can be proposed as a delicious appetizer to be served with croutons, as a main course or as a side dish. Also delicious to eat as a cold dish!

INGREDIENTS FOR
4 PEOPLE

  • 12 artichokes
  • Extra virgin olive oil
  • 4 tablespoons of fresh breadcrumbs
  • 1 tablespoon of grated pecorino
  • juice of 1 lemon
  • 2 cloves of dry garlic (or 1 fresh garlic)
  • origan
  • salt

 TIME: 30 min

 DIFFICULT: easy

 SEASON: spring

PREPARATION

  1. Clean the artichokes, cut them into vertical slices and throw them in water and salt.
  2. after 10 minutes, rinse them and put them still dripping in a pan with ½ cup of extra virgin olive oil and minced garlic, preferably fresh.
  3. add salt to the artichokes and cook them slowly with the lid on, adding a little water if necessary.
  4. when the artichokes are cooked, sprinkle them with breadcrumbs, pecorino cheese, oregano and lemon juice.
  5. Let it all absorb the flavor for a few minutes and enjoy your meal!
